If you know Saltine Crack, then you know just how good it is and how prized it is during the holidays. Well, this is the summer version of that treat. This s’mores graham cracker toffee combines everything you know and love in s’mores: melty marshmallows, delicious chocolate, and honey and cinnamon graham crackers, but with the addition of sweet toffee. This s’mores crack is a must-make if you LOVE s’mores but don’t love the work or the requirement of a campfire to make them. I am calling it now, this is the treat of the summer.
Listen, I love s’mores as much as the next person, but s’mores typically require a fire. Unless you are like me and make stovetop s’mores in the dead of winter. Also, let’s not forget the amount of chocolate, graham crackers, and marshmallows you have to buy to make s’mores. And then there is the process to get the perfect s’more, where the marshmallow is perfectly gooey, not burnt.
Don’t get me wrong, I love the process of making s’mores, but if you just want a delicious treat with minimal work, then consider this graham cracker toffee. Not only does it make enough for a crowd, perfect for outdoor gatherings and parties, but it is also a lot less messy than traditional s’mores. Not to mention, this is a great recipe to get kids involved, and trust me, with two of my own, they will love it.
Are toppings necessary? Absolutely not, this s’mores graham cracker toffee is great as is. However, if you want to mix it up, you can top it with whatever you see fit. If you are making this with or for children, this could be a great way for them to get involved, helping you pick out and even topping the toffee themselves. Below are just a few ideas, but really the options are endless.
Assemble – Preheat the oven to 400°F. Line a sheet tray with aluminum foil or parchment paper and cover the sheet pan with graham crackers in a single layer. You may need to break them up to cover the entire pan.
Make the Toffee – In a small saucepan over low heat, add the 2 sticks of butter and brown sugar. Use a rubber spatula to mix as the brown sugar and butter melt. Once melted, you’ll notice that the butter and sugar are separated; don’t worry, they will come together as it heats up. Bring to a rolling boil for 1-2 minutes and then remove from the heat.
Carefully pour the toffee mixture over the graham crackers, spreading it evenly across all the crackers. An offset spatula is a great tool to use here, but it’s not necessary. Place the sheet pan in the oven for 5 minutes, until the toffee is bubbly.
Note: If you want the toffee to become real hard snappy toffee, boil for 3-5 minutes until the temperature reaches 270-280- degrees.
Make the Fluff – Did you know you can melt marshmallows in the microwave? Typically, I steer away from microwaving, but the process is too easy not to do it this way. While the toffee is in the oven, place the marshmallows in a bowl with 1 tablespoon of water. Microwave this for 10-second intervals, thoroughly mixing in between. This should take less than a minute.
Layer + Melt – Remove the sheet pan from the oven and sprinkle on the chocolate chips. You can either wait a few minutes for the chocolate to melt from the residual heat or pop it back in the oven for a minute. Spread the chocolate evenly. Add the marshmallow fluff and any desired toppings.
Set– Place the sheet pan in the refrigerator for approximately 45 minutes, until both the toffee and chocolate set. Once set, cut the bars into desired shapes and sizes and either serve immediately or store in the fridge until you are ready to enjoy!
This s’mores graham cracker toffee can be stored in an airtight glass container in the refrigerator for 3-4 days. To prevent them from sticking, place a piece of parchment paper between the layers. While my traditional saltine toffee can be stored at room temperature, because of the marshmallows, you really need to keep these chilled until you are ready to enjoy.
