S'mores Graham Cracker Toffee

This s'mores graham cracker toffee combines everything you know and love about s'mores but with the addition of sweet toffee in an easy to eat bar.

Ingredients

  • 15-17 graham crackers
  • 1 cup butter
  • 1 cup brown sugar
  • 10 oz chocolate chips
  • 5 oz marshmallows

Instructions

  • Preheat the oven to 400°F.
  • Line a sheet tray with aluminum foil or parchment paper and cover the sheet pan with graham crackers in a single layer.
  • In a small saucepan over low heat, add the 2 sticks of butter and brown sugar. Using a rubber spatula do your best to mix and combine as both the brown sugar and butter melt. Once melted let it come to a rolling boil for 2 minutes.
  • Note: If you want the toffee to become hard snappy toffee, boil for 3-5 minutes until the temperature reaches 270-280-degrees.
  • While the toffee is in the oven, place the marshmallows in a bowl with 1 tablespoon of water. Microwave this for 10-second intervals, thoroughly mixing in between. This should take less than a minute.
  • Remove the sheet pan from the oven and sprinkle on the chocolate chips. Either give it a few minutes to melt or place in the oven for 1 minute. Spread the chocolate evenly.
  • Add the marshmallow fluff and any desired toppings.
  • Place the sheet pan in the refrigerator for approximately 45 minutes, until both the toffee and chocolate set. Once set, cut the bars into desired shapes and sizes and either serve immediately or store in the fridge until you are ready to enjoy
