There’s nothing better than having an easy marinade in your back pocket, and these grilled chipotle chicken thighs are one you’ll want to save. They’re smoky, herbaceous, with just the right amount of acid to bring it all together. Best of all, they’re incredibly easy to make.
Chicken isn’t boring—you’re just not be marinating it correctly. Give me the choice between red meat and chicken, and I’m choosing chicken every time. Why? Because it’s versatile, a blank canvas for flavor, and these grilled chipotle chicken thighs deliver BOLD, smoky, and herbaceous flavor. They’re perfect for prepping ahead, effortless entertaining, or simply adding something delicious to your weeknight dinner routine. And before you ask: is this a Chipotle copycat? No. It’s better… more flavorful and balanced, with layers of smoky heat, fresh herbs, and bright acidity that make it a no brainer to make.


Marinate the Chicken – In a large bowl, combine the chicken thighs, finely chopped chipotles, 2 tablespoons of the adobo sauce, cilantro, lime zest and juice, grated garlic, onion powder, olive oil, and a generous pinch of salt. Toss until the chicken is thoroughly coated. Cover the bowl with plastic wrap or aluminum foil and refrigerate for at least 1 hour. For best results, marinate the chicken even longer. I typically prepare it in the morning and let it marinate throughout the day before grilling it for dinner.



Note! While this marinade gets better with age I would NOT let the chicken marinade for more than 12 hours due to the lime juice. While it isn’t a big part of the marinade it will start to “cook” the chicken. Best to keep it to 4-6 hours.


Grill – Preheat the grill to 500°F (260°C). Once hot, place the chicken directly on the cleaned grates. Close the lid and cook for 6–7 minutes. Flip the chicken and continue cooking for another 6–7 minutes, or until the thickest part reaches an internal temperature of 165°F (74°C). Cook time will vary depending on the size and thickness of the chicken thighs.
Once done remove the chicken and rest for 2-3 minutes before chopping and serving!

This chicken is screaming for a rice bowl—think Chipotle-style. Serve it over fluffy white rice with black beans (my bean recipe is coming soon!), then top it with a handful of fresh chopped cilantro and sliced jalapeños for an extra kick of heat.
This chicken is also incredibly versatile. Add it to pasta salads, like my Chipotle Southwest Pasta Salad, or enjoy it tucked between two pieces of crusty bread for an easy and flavorful sandwich.

Yes! You can absolutely use chicken breasts instead. Stick with 3 pounds of butterflied or thin-sliced chicken breasts. Since this marinade benefits from the fat content of chicken thighs, add an extra 1/2 tablespoon of olive oil to help keep the chicken moist.
For best results, yes. If you are unable, I would use a grill pan inside. As a last resort, you can roast the chicken in a 400°F (205°C) oven.
The finished chicken isn’t spicy! While four chipotle peppers may seem intimidating, the final result is more smoky and herbaceous than hot.
Store the grilled chipotle chicken in an airtight container in the refrigerator for up to 3–4 days. For the best results, reheat it in a 350°F (175°C) oven for 5–7 minutes, or until warmed throughout. You can also reheat it in the microwave in 30-second intervals.
