Grilled Chipotle Chicken

These grilled chipotle chicken thighs are smoky, herbaceous, with just the right amount of acid to bring it all together. Best of all, they're incredibly easy to make.

Ingredients

  • 3 lbs boneless skinless chicken thighs
  • 4 chipotles in adobo sauce minced, with 2 tbsp of the adobo sauce
  • 1/2 cup cilantro chopped, approx. 1/2 large bunch
  • 3 garlic cloves grated
  • 1 lime zest & juice
  • 1/2 tsp onion powder
  • 1 tbsp olive oil

Instructions

  • In a large bowl, combine the chicken thighs, finely chopped chipotles, 2 tablespoons of the adobo sauce, cilantro, lime zest and juice, grated garlic, onion powder, olive oil, and a generous pinch of salt. Mix until throughly coated.
  • Cover the bowl with plastic wrap or aluminum foil and place in the fridge for a minimum of 1 hour maximum of 12.
  • When ready to cook preheat the grill to 500°F (260°C).
  • Once hot place the chicken thighs on cleaned grates and cover. Cook for 6-7 minutes on each side until cooked through (the thickest part should reach 165°F (74°C).
  • Remove from the grill and rest for 2-3 minutes before cutting and serving!
