These grilled chipotle chicken thighs are smoky, herbaceous, with just the right amount of acid to bring it all together. Best of all, they're incredibly easy to make.
4chipotles in adobo sauceminced, with 2 tbsp of the adobo sauce
1/2cupcilantrochopped, approx. 1/2 large bunch
3garlic clovesgrated
1limezest & juice
1/2tsponion powder
1tbspolive oil
Instructions
In a large bowl, combine the chicken thighs, finely chopped chipotles, 2 tablespoons of the adobo sauce, cilantro, lime zest and juice, grated garlic, onion powder, olive oil, and a generous pinch of salt. Mix until throughly coated.
Cover the bowl with plastic wrap or aluminum foil and place in the fridge for a minimum of 1 hour maximum of 12.
When ready to cook preheat the grill to 500°F (260°C).
Once hot place the chicken thighs on cleaned grates and cover. Cook for 6-7 minutes on each side until cooked through (the thickest part should reach 165°F (74°C).
Remove from the grill and rest for 2-3 minutes before cutting and serving!
