Ingredients
2garlic cloves
3jalapeƱosstems, seeds and pith removed
1-3green birds eye chilies / Thai chiliescan sub out for red
2large bunches of cilantro or 3 smaller ones 150g
1limejuiced
1/2tspground cumin
1/2tspground coriander
salt
1/2cupneutral oilavocado, vegetable, or canola
Instructions
Prep and clean the cilantro by cutting off about an inch to an inch and a half from the bottom and discarding it. Rinse throughly.
Start with blending the garlic, both jalapeƱos and birds eye chilies.
Add in the cilantro, lime juice, and spices as well as a heavy pinch of salt. You may need to add the cilantro in parts depending on how large your food processor is. Process on high for 1 minute.
Add the oil while running the food processor on low. Once added run the machine on high for 30 seconds.
Add additional salt if needed. Let the mixture sit in the fridge for 15-20 minutes before consuming.
