This Zhoug is a combination of chilies, warm spices, herbs, and a touch of acid to create a vibrant, unique hot sauce.

Ingredients

  • 2 garlic cloves
  • 3 jalapeños stems, seeds and pith removed
  • 1-3 green birds eye chilies / Thai chilies can sub out for red
  • 2 large bunches of cilantro or 3 smaller ones 150g
  • 1 lime juiced
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • salt
  • 1/2 cup neutral oil avocado, vegetable, or canola

Instructions

  • Prep and clean the cilantro by cutting off about an inch to an inch and a half from the bottom and discarding it. Rinse throughly.
  • Start with blending the garlic, both jalapeños and birds eye chilies.
  • Add in the cilantro, lime juice, and spices as well as a heavy pinch of salt. You may need to add the cilantro in parts depending on how large your food processor is. Process on high for 1 minute.
  • Add the oil while running the food processor on low. Once added run the machine on high for 30 seconds.
  • Add additional salt if needed. Let the mixture sit in the fridge for 15-20 minutes before consuming.
