Ingredients

  • 2 lbs mussels
  • 1/2 lb spicy Italian sausage
  • 5 garlic cloves minced
  • 1-2 tbsp crushed Calabrian chilis
  • 1 cup dry white wine
  • 2 tbsp butter
  • 1 cup chicken broth
  • 1/4 cup cilantro chopped
  • olive oil

Instructions

  • Clean and prep the mussels as per post details.
  • Place a large pan or Dutch oven on the stove with a drizzle of olive oil over medium heat. Once the oil is hot, add the sausage and let it cook for 1 minute before breaking it up with the back of a spoon. Cook the small sausage crumbled until cooked throughout approx. 4-5 minutes.
  • Remove the sausage but leave the fat. Reduce the heat to low.
  • Add the garlic along with 1-2 tablespoons of the Calabrian chilies. Sauté the garlic and chilies for 1-2 minutes until soft and fragrant.
  • Pour in the wine and add 2 tablespoons of butter, allowing it to reduce for about 4 minutes. The wine should reduce by half before adding in the chicken broth. Bring to a simmer.
  • Toss in the mussels and cover the pot with a lid. Cook for about 5-7 minutes, or until the mussels are fully open. Check at the 3 minute mark and give the mussels a toss for even cooking.
  • Once the mussels are done, add the sausage, along with any fat or liquid from the bottom of the bowl, plus a generous amount of chopped cilantro. Serve immediately.
