4Italian sausage linkshot or mild, casing removed and discarded
1/2small yellow onionminced
6garlic clovessliced
215ozcans of cannellini beans1 can drained
1 1/4cupschicken broth
Parmesan cheese rind
6stemslacinato kaleapprox. 4 cups loosely packed
1/4cupheavy cream
1/2cupParmesan cheese50g
kosher salt
Instructions
Place your skillet or wide sauté pan over medium heat. Once hot, add 1 tsp of olive oil. Heat for 10 seconds before adding the sausage. Sear for 1 minute before breaking it up with a large wooden spoon using a twisting motion. Break into small crumbles.
Once the sausage is broken up add the onions and garlic. Cook for 2-3 minutes.
To the pan, add the beans (one can drained and the other with its liquid), chicken broth, and Parmesan rind. Bring to a simmer, then lower the heat, cover, and cook for 10 minutes.
While the pan is simmering prep the kale. The kale needs to be removed from the stem before chopping. Break the leaf away at the base, then use two fingers to pinch the stem. With a quick pull down, the stem should separate cleanly from the leaf. Give it a rough chop.
After 10 minutes remove the lid and skim off half the fat that is pooling on the top.
Mix in the kale and simmer uncovered for another 5 minutes.
Add the heavy cream and mix. Cook for 1 minute.
Turn off the heat and toss in the Parmesan cheese, fold until throughly combined. Salt to taste only after the cheese has been added. Serve + enjoy!
Notes
Depending on how salty your chicken broth is you might not need to salt this dish. The Parmesan adds a ton of salty flavor, so make sure you salt to taste only after you have added it in.
