Mediterranean Panzanella Salad

Ingredients

  • 2 pita breads thick pocket or flatbread
  • 12 oz cherry tomatoes
  • 1/3 small red onion sliced thin
  • 1/4 cup chopped cilantro
  • 7-9 sprigs mint stems discarded, chopped
  • 4 oz feta cheese
  • 1/3 cup kalmata olives roughly chopped
  • 1/3 cup Castelvetrano roughly chopped
  • 1 tbsp za'atar
  • 2 tsp olive oil
  • 1 tsp champagne vinegar

Instructions

  • Preheat the grill to 450°F.
  • Once hot, place the pita bread directly on clean grill grates. Grill for 2–3 minutes on each side, or until crisp on the outside and lightly charred. Remove, allow to cool for a minute, before slicing in large yet still bite size pieces.
  • In a large bowl, combine the halved tomatoes, thinly sliced onions, chopped herbs, crumbled feta cheese, roughly chopped olives, and grilled pita bread.
  • Add the za'atar, and drizzle in approx. 2 tsp of olive oil and 1 tsp of vinegar. Toss to throughly coat and taste. If it needs more moisture add another drizzle of both olive oil and vinegar. Salt if needed.
  • Allow the salad to sit for 10 minutes before serving for best results.
