  • 1 small cocotte or oven safe dish

Ingredients

  • 24 garlic cloves save 1 on the side
  • 2 tbsp fresh parsley leaves removed from stems, minced
  • 1/3 cup parmesean cheese freshly grated
  • olive oil
  • 2-3 sprigs of thyme and/or fresh oregano

Instructions

  • Preheat oven to 400℉.
  • In a cocotte or oven-safe dish, add the garlic, along with optional thyme or oregano, and pour in enough olive oil to fully cover the cloves. The amount of oil will vary depending on how large the cocotte is. (1/2 cup to 1 cup)
  • Cover with a lid and roast at 400°F for 20–30 minutes, until the garlic is soft, fragrant, and lightly golden brown.
  • In a low bowl add the garlic confit, minced clove of fresh garlic, minced parsley, and freshly grated Parmesan. Add as much or as little of the confit oil and supplement with olive oil if needed. Add a heavy pinch of salt and serve with crusty bread.
