DEGLAZE WITH A DRY WHITE WINE AND COOK FOR 3-4 MINUTES UNTIL IT HAS REDUCED IN HALF. ADD THE PASTA WATER AND SIMMER.

ADD THE CREAM

ONCE THE PASTA WATER HAS ALMOST REDUCED BY HALF ADD THE HEAVY CREAM AND SIMMER FOR 2-3 MINUTES UNTIL THE FAT HAS INCORPORATED. ADD MORE PASTA WATER IF THE SAUCE HAS OVER REDUCED
