French Onion Gnocchi

Rich, creamy, sweet, and savory, this French onion gnocchi combines all the familiar flavors of French onion soup.

Ingredients

  • 3 tbsp butter
  • 2 large vidalia onions or "sweet onions", diced small
  • 1 tsp thyme fresh
  • 1 tbsp flour
  • 2 cups beef broth
  • 1 tsp Worcestershire Sauce
  • 1 bay leaf dried
  • 1/2 cup heavy cream
  • 2.5-3 oz Gruyère cheese grated
  • 1/2 cup bread crumbs panko or homemade
  • 1 tsp olive oil +/-
  • 1 lb potato gnocchi

Instructions

Crispy Bread Crumbs

  • In a pan over medium-low heat add a drizzle (approx 1 tsp) of olive oil.
  • Once heated, add the bread crumbs and toss to coat. Cook until golden brown and crispy, making sure to mix every few seconds. Place on the side for later.

French Onion Gnocchi

  • Melt the butter in a wide pot over low-medium heat. Once melted add the diced yellow onions, a heavy pinch of salt and give it a good toss.
  • Cook for 35-40 minutes until onions are dark brown and jammy, mixing every 8-10 minutes. 5 minuted before the onions are done add in the thyme
  • Once done add in the flour, mix coating the onions in flour, and cook for 1-2 minutes.
  • Deglaze the pan with broth. Add in the Worcestershire sauce, and a bay leaf. Cover and simmer for 10 minutes check on it and mixing every few minutes.
  • On another burner start a pot of salted water to cook the gnocchi as per packaging. Once done, drain and place on the side.
  • Once done simmering add heavy cream to the sauce and cook for 1-2 minutes. Turn off the burner and add in the grated cheese. Mix to combine. Serve with crispy breadcrumbs on top.
