Vermicelli with Rice

Fluffy, and flavorful consider this Middle Eastern rice dish your everyday rice.

Ingredients

  • 1 tbsp butter or olive oil avoid EVOO
  • 1/4 cup vermicelli noodles crushed to 1/2 inch sticks
  • 1 cup rice
  • 1/2 tsp salt kosher
  • water

Instructions

  • In a pot melt the butter (low-medium heat) or heat up the oil (medium heat). Add in the crushed vermicelli noodles and toast until golden brown, mixing every few seconds to ensure all noodles are cooking evenly.
  • Toasting Rice: Once vermicelli noodles are golden brown add in the rice and toast for 3-5 minutes. Add in water (as per packaging), salt, and give it a good mix. Reduce the heat and cover. Cook as per packaging.
  • Not Toasting: Once vermicelli noodles are golden brown add in water, salt, and rice. Give it a good mix. Reduce the heat and cover. Cook as per packaging.
  • 2 minutes before time is up give the rice a peak (DO NOT MIX), rice should be soft and fluffy. If done place lid back on and let the rice sit for 10 minutes undisturbed. If by any chance the rice is still hard and there is no more water add a tbsp or two and continue cooking on low for a few more minutes, then remove from heat and let it sit undisturbed for 10 minutes.
