Ingredients
10ozcherry tomatoesor substitute with grape tomatoes.
2 tbspcapers
1-2tbspanchoviesminced
2-3 tbspkalamata olivescrushed or rough chopped
olive oil
Instructions
Tomato Confit
Preheat your oven to 375°F degrees.
In a small ramekin, croquette, or another small oven safe dish add your cherry tomatoes. Fill the container 3/4 of the way with olive oil and pop it in the oven for about 30 minutes. *a good tip is to place the container on a sheet pan in case it overflows.
Assembly
Once cooled add the tomatoes, capers, kalamata olives, anchovies, and tomato confit olive oil + juices to a low bowl. If you need to top it off with additional EVOO. Serve with crusty bread.
