Puttanesca Bread Dipping Oil

All the familiar flavors in pasta puttanesca, but in a bread dipping oil.

Ingredients

  • 10 oz cherry tomatoes or substitute with grape tomatoes.
  • 2 tbsp capers
  • 1-2 tbsp anchovies minced
  • 2-3 tbsp kalamata olives crushed or rough chopped
  • olive oil

Instructions

Tomato Confit

  • Preheat your oven to 375°F degrees.
  • In a small ramekin, croquette, or another small oven safe dish add your cherry tomatoes. Fill the container 3/4 of the way with olive oil and pop it in the oven for about 30 minutes. *a good tip is to place the container on a sheet pan in case it overflows.

Assembly

  • Once cooled add the tomatoes, capers, kalamata olives, anchovies, and tomato confit olive oil + juices to a low bowl. If you need to top it off with additional EVOO. Serve with crusty bread.
