Chili oil noodles inspired by the everything bagel, and the Chinese noodle dish You Po Mian. These noodles are spicy, garlicky, savory, and packed with a ton of umami.

Ingredients
Everything Garlic Chili Oil
3tbspneutral flavored oilcanola or vegetable
2tspeverything seasoning
1/2tspchili flakes1 tsp for extra spicy
1tsp Gochugaru
1tbspsoy sauce
2tspdark soy sauce
2clovesgarlicminced
1green onion / scallion sliced thinly, green and white part separated

3oznoodles
1-2tbspcilantroroughly chopped
1eggpoached or soft boiled
pork bellyroasted
Instructions
Combine all the garlic chili oil ingredients in a bowl excluding the oil (the same bowl you are going to eat out of).
In a saucepan over medium-low heat add the oil and heat until sizzling hot. Either check the temp (approx 250°F) or throw a chili flake, if it bubbles it is ready.
At the same time prepare the noodles as per the package, and prepare the egg.
Add the oil carefully to the bowl of spices and aromatics. The oil will violently bubble for a few seconds. Once done bubbling mix the ingredients.
Toss in the noodles and cilantro to cover thoroughly. Add on the poached egg and any additional add-ons such as the pork belly. Serve immediately.
Notes
If opting for the optional pork belly roast slices at 400F degrees for 10-13 minutes or until done.
