PREP THE SMELT

IF POSSIBLE BUY SMELT THAT HAS ALREADY BEEN GUTTED. IF NOT GUT THE SMELT AND CLEAN WELL. PLACE THE SMELT ON A SHEET PAN OR PLATE AND DRY WITH A PAPER TOWEL. 

DREDGE THE SMELT

SEASON WITH A PINCH OF SALT AND COAT THE FISH IN A BIT OF FLOUR. SHAKE OFF EXCESS.

FRY
