START BY COOKING THE ONIONS IN BUTTER UNTIL NICE AND CARAMELIZED. THIS TAKES APPROX 35-40 MINUTES. ONCE THEY ARE DONE ADD THE REST OF THE INGREDIENTS TO MAKE IT INTO A GRAVY FOR THE FRIES.
CUT THE POTATOES INTO FRIES AND SOAK IN COLD WATER FOR A MINIMUM OF 30 MINUTES. THIS WILL STRIP A LOT OF THE STARCH NECESSARY FOR A CRUNCHY FRY. DRAIN AND RINSE.
Toss the dried fries in 1-2 tbsp of olive oil , 1 tbsp of corn starch, and a heavy pinch of salt. Toss. Preheat the air fryer to 390 degrees, after 3 minutes of preheating add the fries and cook until desired crispiness 10-14 minutes.
PLACE THE COOKED FIRES ON A SHEET TRAY. TOP WITH CHEESE AND BAKE FOR 5 MINUTES UNTILL MELTY. TOP WITH CHEESE CURDS AND ENJOY!
